Spelt flour is an alternative. It can be purchased at a Health Food Store. It was supposedly the original wheat used long ago before our wheat flour was developed to specifically contain extra gluten - which makes the bread hold together to make slicing easier. Spelt makes excellent biscuits for which I will share a recipe if anyone is interested.
