You absolutely want a mandolin or food processor to slice your squash good and thin for snack dehydrating - delicious, BTW! I'm going to try doing my little sugar pie pumpkins in the dehydrator with a little spices and brown sugar sprinkled on top.
 
Also, if you planted too many canteloupe or watermelons, peel, slice thinly and dehydrate. Also very yummy but not very long-lasting once the grandkids discovered them. VERY yummy. I sprinkled one batch with a very tiny bit of sea salt and the flavor was intensified and oddly sweeter. The watermelons (Georgia Rattlesnake and Orangeglo) were cut into inch cubes and just about disappeared but the flavor was incredible.
 
My Excalibur 9 tray is working daily. I wish we had bought it years ago. Dehydrated some figs as well as putting up 148 half pints, 96 pints and 2 quarts of assorted fig and something preserves. (Not exaggerating, we had a LOT of figs.)
