Jim Kennard talks on his first radio program on Friday night, that you can't freeze lettuce.  I have the perfect solution for everyone to preserve the live enzymes and have a freezer full of produce.  Buy a quality Juicer.  The leaves that are not quality for using the roughage in your soups or stir frys, can be composted or if you use veggies sraps for you outdoor worm beds, freezer these scraps for your worms.  I stopped feeding scraps in my tote bins, due to too much heat.  I use Purina Worm chow at this time.  Back to freezing lettuce. 
 
Thouroughly clean your produce leaves and drain as much water off as possible.  Juice your leaves and freeze your produce juice in Ice cube trays.  When frozen, I place the cubes in Gallon freezer bags and label the JUICE BLEND CUBES OR SINGLE JUICE CUBES for my green food, whey protein and fruit smoothies.  A great way to get your children to eat veggies by making a delicious smoothie that tastes like a milk shake, etc.  Than, take the good scraps and portion them into small pint or quart freezer bags, so you can use the amount you want in your stir frys, cakes, breads, soups, etc.  Be creative as to what you use the good scraps for.  These scraps you can freezer.  Wallaaaa... You now know how to Freezer Lettuce, spinach, turnip, beet (good for Kidney cleanses).  I have a good book by Dr Walker, Fresh Vegetable and Fruit juice book, with over 80 blends using Carrot juice as the base juice, most of the time.  I use frozen fruit in my smoothies
or fresh, but frozen makes it nice and thick.  Be bless.
