A bathroom scale and a kitchen scale would be the best to use here as measuring out cups of gypsum would be tedious! Also, depending on how lightly packed/hard packed the materials are (think of baking with flour) in the cup measuring glass the different each cup would weigh. However, these materials are denser than flour so you may be able to get away with it, but I'd recommend a scale.
Gypsum - a 5 gal bucket weights roughly 1.8 pounds. Use a bathroom scale to weight out 21.8 pounds with the gypsum and bucket and you're set. If that isn't possible, using the same math as I used for Borax below, 20 pounds would be roughly 15-1/4 cups.
Epsom Salt - Looks like you're set there with 1-3/4 cup!
Borax - you could split the 4 pounds 4 ways, or use a kitchen scale remembering to subtract the weight of the container. Or a 4 pound box of borax is 5.25 cups (assuming 90% of the box is product). This math works out to be 1 cup and 5 tables spoons for 1 pound of borax. hint - another way to check this is to measure all the borax in the container in cups to confirm it is about 5.25 cups total you have but make sure to keep everything dry and not to inhale the material.
