Vegetables Gardening - Growing Organic Vegetables

I just got involved with a community garden in my hometown, Dunwoody, GA. I haven't gardened since I was a little girl. Someone also suggested I do something around my mailbox to share with neighbors - get a little community gardening spirit in my neighborhood as the community garden is in a park a few miles away.

What would be best to plant and how for a newbie and in Georgia, something that rabbits or whatever won't get at? I'd like to keep it in a pot of some sort near my front yard mailbox to share with neighbors and get them interested in growing their own veggies/fruits.

Any ideas are welcome!
