In many locations throughout the world people use what's often called a low tunnel greenhouse to grow greens into the winter months, and to start seedlings in the early spring.

Here are a couple of links if you are interested. I recommend you spend the extra money to get UV protected Greenhouse Plastic, rather than the construction plastic you get from walmart, HD & Lowes, etc.
