To dry them, wash & pat dry, then lay them out on what you will dry them on. You can dry them on a cookie sheet in the oven set on a low temperature or you can use a food dehydrator. If you use the oven, you might want to leave the door ajar to let out any moisture. You can leave them on the stems & then crush & crinkle them off of the stems or you can take the leaves off the stems before you dry them so all you have to do is crush what is there. You can also store them whole & then wait until you use them to crush them up. This would be for the herbs that use the leaves & not for things like garlic.
