I also dehydrate zucchini. I use a dehydrator and you can find them
fairly cheap at Walmart. I got mine there a few years ago but the important
thing is to make sure you buy a dehydrator with a fan. Otherwise, sometimes
the veggies get mildewed before they dehydrate.

Another thing. I put my dehydrated foods in freezer zip lock bags and
place in the freezer for safe keeping. IF your vegetables are not dehydrated
to the proper dryness, they will mildew on the shelf.

Try dehydrating slices of tomatoes. Also great crumbled on salads, in
soups, spaghetti sauces to thicken up the sauce and best of all, eat them
like potato chips. The flavor is incredible. I also give jars of them for
gifts. Everyone loves them.
Same goes for dehydrated tomatoes----place in freezer after drying.
