I am not a go-along to get-along sorta guy.
I wanna know WHY.

But there are reasons for N-S. Your slope just makes it more prudent.
On top of that, going past 30 ft makes the PVC system harder.

RARELY are E-W beds well advised.
You have to manage watching & planning plant heights all along their lifespan, harvests, what to replant with in the rear, now-shaded, rows, etc.
A 15 ft bed can be easier to mass-plant and harvest too.

It's a tradition, but in this case solar power is the reason.
You just have even more reasons than that.

agree with Jim. It will be much less work.
And beds are traditionally north to
south, anyway.
