It also depends on the number of “degree days” at your location. Degree days, or more accurately, Growing Degree Days, (GDD) are the number of days above a reference temperature. Drought and or disease can also affect the maturity date.
Two summers ago, we had consistent high temps (95+ F) for about a month. My tomatoes did not seem to grow at all during that time. It was as if they took that month off. I had a great year for tomatoes. Once the weather cooled down, things returned to normal.
Very high temperatures, about 106 F, can kill pollen preventing fruit set.
Succession planting, where you start seeds at 1 week intervals also means that you will have several maturity dates and provide you with fresh fruit over a longer period of time provided your growing season is long enough. This works best with selfers, self pollinating plants. Some plants, i.e. corn, will not do well if succession planted because of the way they pollinate.
