[MittleiderMethodGardening] Does anyone know when pepperoncini peppers are ready to harvest?

 

I'm growing almost my entire garden except lettuce and herbs in topsy turvy planters this year and I find that everything grows much faster. I only planted exactly 1 month ago and have quite a few tomatoes, cucumbers and pepperoncini peppers. The tomatoes are big but still green and the cukes are only about 5" long so far so obviously I know those are not ready. I have no idea when pepperoncini peppers are ready though!

They vary in size from 1-2" so they're on the small side but they also very in color from green to yellowish to red. What color and how big are they supposed to get? Then once I've picked them does anyone know how to pepper them? I love these things on sandwiches! Last year I made spicy sour dill pickles from all of my cukes and they came out fantastic. I'm planning to do the same thing again this year. I wouldn't use the same recipe for the pepperoncinis that I do for the pickles, would I? I doubt it.
